Instructions:
1) Making the Crumbled Barfi:
- In a mixing bowl, combine 2 cups of wheat flour with 4 tbsp of oil. Mix well until the flour resembles coarse crumbs.
- Shape the mixture into small balls and flatten them slightly, creating a thumbprint in the center.
- Heat oil in a pan over medium heat and fry the flattened balls until golden brown and cooked through, about 8 to 10 minutes. Ensure even cooking by stirring occasionally.
- Once cooked, remove from the oil and drain excess oil on a paper towel.
- Break them into small pieces and grind them upon reaching room temperature to prevent moisture.
- Filter them using a sieve for the same texture.
- Remove bigger particles and add half cup of ghee. Mix well.
2) Preparing the Sugar Syrup:
- In a separate saucepan, combine 1 to 1 ½ cups of sugar with 1 cup of water. Heat over medium heat until the sugar dissolves completely.
- Add cardamom powder, nutmeg powder, and saffron (optional) to the sugar syrup and mix well.
3) Mixing the Ingredients:
- Once the sugar syrup reaches a one-string consistency, add the fried wheat balls (crumbled barfi) to the syrup.
- Stir gently to coat the wheat balls evenly with the syrup mixture.
- Optional: Add chopped nuts like almonds or pistachios for added texture and flavor.
4) Shaping and Garnishing:
- Transfer the coated mixture to a mold or tray lined with parchment paper.
- Press the mixture evenly into the mold or tray to ensure it sets properly.
- Garnish the top with chopped pistachios or almonds for a decorative touch.
5) Serving:
- Allow the crumbled barfi to cool and set completely before cutting into pieces of desired size and shape.
- Serve on a plate and enjoy this traditional Indian sweet with friends and family.
