Introduction:

perfect for the summer vegetables. Quick to make and light on the stomach, this dish is not
only delicious but also friendly for those watching their weight. Sambhar, a traditional South
Indian lentil-based stew, gets a refreshing touch with the addition of crunchy cabbage and
other colorful vegetables.

Recipe

Recipe:
1. Slicing and washing cabbage
- Wash 300 grams of cabbage thoroughly under running water to remove any dirt or
impurities. Cut the cabbage into slices, ensuring they are slightly thick to retain their
crunchiness after cooking.
2. Adding carrot
- Slice 1 carrot into thin, lengthy pieces for added texture and color.

- Cut 2 cucumbers into long pieces to complement the cabbage and other vegetables.

let them sit for 5-7 minutes. This process helps draw out excess water from the vegetables,

preventing the Sambhar from becoming watery during cooking. Afterward, gently press the
vegetables to remove any remaining water, and transfer them to a separate bowl.
6. Cooking Process:
- Heat 1 teaspoon of oil in a pan over medium heat. Once the oil is hot, add 1/2 teaspoon
of mustard seeds and let them splutter, releasing their aromatic flavor.
- Add a pinch of asafoetida (Hing) to the pan, enhancing the dish's aroma and aiding
digestion.
- Chop 2 green chillies and add them to the pan, adjusting the quantity according to your
spice preference. Green chillies add a subtle heat to the dish without overpowering other
flavors.
- Sprinkle 1/4 teaspoon of turmeric powder over the mixture, giving the Sambhar a vibrant
yellow color and earthy flavor.
- Add the sliced carrots to the pan and cook them for 2 minutes, allowing them to soften
slightly.
- Next, add the sliced capsicum to the pan and continue cooking, maintaining the
vegetables' crunchiness.
- Finally, add the prepared cabbage and cucumber mixture to the pan. Stir well to combine
all the ingredients and ensure even cooking.
- Sprinkle a little cumin powder over the mixture, adding a warm, nutty flavor to the
Sambhar without overwhelming its fresh vegetable taste.
- Turn off the heat and transfer the cooked Sambhar to a serving bowl, ready to be
enjoyed.

- For a touch of natural sweetness, consider adding half an apple or your favorite fruit to
