MASALA PANI PURI RECIPE

Recipe:
1. Preparing Green Pani:
- Soak amla in very hot water for 30 minutes.

- In a blender, add ice cubes, chopped ginger, chopped green chilies, and soaked
coriander leaves.
- Blend to a smooth paste and strain using a fine sieve (channi).
- Reserve the filtered paste for later use.
- In a mixing bowl, add the filtered paste and remaining spices for green pani.
- Mix well and chill in the freezer.
2. Preparing Sweet and Sour Pani:
- Heat a pan and add soaked tamarind (without seeds), jaggery, and water.
- Add spices and let it simmer until jaggery melts completely.
- Turn off the heat and strain the mixture.
- Add more water to dilute the mixture and chill in the freezer.
3. Preparing Masala Filling:
- In a bowl, mash cooked chickpeas and boiled potatoes together.
- Add all the spices for the masala filling and mix well.
- Adjust seasoning according to taste.
4. Assembling Masala Pani Puri:
- Take puris (hollow crispy balls) and gently make a hole on one side.
- Fill each puri with a spoonful of masala filling.
- Pour chilled green pani and sweet and sour pani into each puri.
- Garnish with chopped coriander leaves and dry bundi.
5. Serving:

- 1/4 teaspoon asafoetida (hing) powder
- 1 teaspoon cumin seed powder
- 1 teaspoon jaljeera powder
For Sweet and Sour Pani:
- 3 raw tamarind (batakas)
- 2 cups cooked chickpeas (channa)
- 2-3 green chilies (chopped)
- 1 teaspoon black salt
- 1/2 teaspoon roasted cumin powder
- 1/2 teaspoon amchur powder (dried mango powder)
- 1 teaspoon red chili powder
- 1 teaspoon regular salt
- 1 packet jaljeera powder
- Few chopped onions
- 1/2 lemon (juiced)
- Filtered remains of green water
For Masala Filling:
- 2 cups cooked chickpeas (channa)
- 1 cup boiled potatoes (bataka)
- 1 teaspoon black salt
- 1/2 teaspoon roasted cumin powder
- 1/2 teaspoon amchur powder (dried mango powder)
- 1 teaspoon red chili powder
- 1/2 teaspoon regular salt
- 1 packet jaljeera powder
- Few chopped green coriander leaves
For Garnish:

- Dry bundi (small gram flour balls)
