Instructions:
1. Preparing the Poha Batter:
1. Wash the Poha:
- Take 1 cup of poha and wash it properly with water. Let it sit in a chalni (strainer) for 4-5
minutes to drain all the extra water.
2. Grind the Poha:
- After draining, grind the poha in a mixer jar to form a coarse mixture.

3. Mix with Semolina:
- Add 1/2 cup of semolina to the ground poha. Mix well.
4. Add Buttermilk:
- Add 1/2 cup of sour buttermilk or curd. If using curd, ensure it’s not too watery.
5. Add Curry Leaves and Other Ingredients:
- Add 8-10 curry leaves and grind the mixture again to combine.
- The resulting mixture should be thick. If it’s too loose, adjust by adding more semolina or
poha.
6. Add Vegetables and Spices:
- Add finely chopped red chili, coriander leaves, and 1 1/2 teaspoons of salt. Mix
everything well.
Tips:
- The consistency should be thick enough to shape. If it's too loose, adjust by adding more
semolina or poha.
- Make sure all the ingredients are mixed well for even flavor.
2. Shaping and Steaming the Poha Vada:
1. Grease the Steamer Plate:
- Grease the steamer plate with oil.
2. Shape the Vada:
- Apply oil on your palms. Take a small amount of the poha mixture and shape it into a
round ball. Flatten it and make a hole in the middle to resemble a medhu vada.
- Repeat this process with the remaining mixture.
3. Steam the Vada:
- Place the shaped vadas on the greased steamer plate.
- Heat water in the steamer until boiling. Place the plate in the steamer, cover it, and steam
on high flame for 8-10 minutes.
4. Check for Doneness:
- After steaming, check the vadas with a knife to ensure they are cooked through.
Tips:
- Ensure the water in the steamer is boiling before placing the vadas inside.
- The vadas should be cooked until firm and not sticky.
3. Preparing the Tempering (Optional):
1. Heat Oil:
- In a pan, heat 2 tablespoons of oil on low flame.

2. Add Tempering Ingredients:
- Add 2 teaspoons of sesame seeds, 1/2 teaspoon of asafoetida, and 5-7 curry leaves.
- Sauté for a few seconds until fragrant.
3. Add Garlic and Onions:
- Add finely chopped garlic and sauté until golden brown.
- Add 1/3 cup of finely chopped onions and sauté until they turn pink (about 1-2 minutes).
4. Add Tomatoes and Spices:
- Add 1 cup of finely chopped tomatoes, salt to taste, 1 teaspoon of red chili powder, 1
teaspoon of pav bhaji masala, and 1 teaspoon of turmeric powder.
- Cook for 1-2 minutes until tomatoes soften. Add 2-3 tablespoons of water to make the
gravy slightly juicy.
5. Add Steamed Vadas:
- Add the steamed poha vadas to the gravy, coating them well.
- Cook for another 1-2 minutes, allowing the flavors to blend.
Tips:
- Adjust the spice level according to your preference.
- Add a little water if the gravy is too thick.
4. Serving:
- Serve the poha vadas hot, coated with the flavorful tempering.
- Garnish with thinly chopped coriander leaves.
Tips:
- Serve immediately for the best taste. The vadas may not taste as good when cold.
- You can pair them with various chutneys for added flavor.
