Shakarpara

Shakarpara

Introduction: Shakarpara, also known as Shakkarpara, is a delightful sweet snack that's a staple during festivals like Diwali. These crispy, layered treats are made from flour and sugar, providing a perfect balance of sweetness and crunch. This recipe includes a secret ingredient to ensure your shakarpara turns out khasta (crispy) and flavorful. Let’s dive into this delicious recipe!

Recipe

Instructions:

  1. Prepare the Sugar Syrup:

    • In a saucepan, combine the sugar and about 200 ml of water. Heat on medium flame until the sugar dissolves completely. You want a thin syrup consistency; do not let it boil.
  2. Make the Dough:

    • In a mixing bowl, combine the all-purpose flour and baking powder.
    • Add 100 grams of ghee to the flour and mix it in until it resembles breadcrumbs.
    • Slowly pour the sugar syrup into the flour mixture while kneading. Add just enough water as needed to form a soft, pliable dough. Let the dough rest for about 15-20 minutes.
  3. Roll and Shape:

    • Divide the dough into equal portions. Take one portion and roll it out on a floured surface into a thin layer (about ¼ inch thick).
    • Cut the rolled dough into desired shapes (squares or diamonds) using a knife or pizza cutter.
  4. Heat the Oil:

    • In a deep pan, heat oil on medium flame for frying. To test if the oil is ready, drop a small piece of dough into the oil; it should sizzle and rise.
  5. Fry the Shakarpara:

    • Carefully slide the cut pieces into the hot oil, frying in batches to avoid overcrowding. Fry until they turn golden brown and crispy, about 3-4 minutes.
    • Use a slotted spoon to remove them from the oil and drain on paper towels.
  6. Cool and Store:

    • Allow the shakarpara to cool completely before storing them in an airtight container. They can last for weeks if stored properly.

Enjoy your crispy and delicious Shakarpara as a festive snack or treat any time of the year!
