Mix Dhokla is a delectable and savoury Indian snack that combines the goodness of different lentils and rice. This mouthwatering recipe involves steaming a batter made from a blend of various lentils and a perfect mix of spices. The result is a soft, spongy, and flavourful dhokla, which can be garnished with oil and Locho Masala for an extra zing.
Method Mix all the lentils and rice together and keep them soaked for sometime. Now grind the lentils after straining out the water and mix curd as well. Once you grind it, keep the batter in a steel container (as shown) for fermentation. Now add turmeric powder to the batter and mix it well. Cover it with a lid and keep it in a hot and dark place. After about 7-8 hours, you will notice that the batter has fermented well. This batter can be stored in the refrigerator for 8-10 days. Transfer the batter to a glass bowl and add 1/3 cup of water to it. Mix it well so that the consistency is like dhokla batter. Now add the grated carrot, crushed peas, chilli ginger garlic paste and Bitter Gourd. Mix everything well. If the batter is a bit thick in consistency, you can add 1/4 cup of water. In a mixing bowl, add 1 cup of prepared batter and then add Eno to it. If you don't have Eno, then you can add baking soda to it. Mix it well. Line the plate or tray with oil and pour the batter onto it and spread as shown. Preheat the steamer for sometime and then cook it for 10-12 minutes. Once it is cooked, spread some oil on top of it along with Locho masala or red chilli powder. Your delicious Mix Dal Veggie Dhokla is ready to eat.
