Gujarati Suvali is a delicious and aromatic dish primarily made from ridge gourd (locally known as "turai" or "suvali") cooked in a flavorful blend of spices.
It's a vegetarian delicacy that's light, healthy, and bursting with traditional Gujarati flavours.

Instructions for Sweet Suvali Dough:
Take half a cup of milk and add 3 tbsp powdered sugar, mix it well, and set it aside.
In a bowl take one cup of all-purpose flour, add 2 tbsp of Granulated wheat, add half crushed sesame seeds, and add 1 tbsp of clarified butter for better dough. Mix it well.
Gradually add milk to the mixture while stirring with a teaspoon until a dough forms.
Let the dough rest for 15 to 20 minutes, covering it with an object.
Once the dough has rested, take parts of it and knead it for 8 to 10 minutes.
Divide the dough into small portions and knead into a thin round shape softly.
Heat oil in a pan over medium heat.
The formed suvali pieces should be well fried by adding them one at a time and frying them in the oil.
Once fried, remove the sweet suvali from the oil and set aside.
Tips:
Ensure the dough consistency is firm yet pliable.
Allow the dough to rest for the specified time.
Maintain oil at medium heat for frying.
Shape suvali evenly and gently.
Fry suvali in batches without overcrowding.
Drain fried suvali on paper towels.
Cautions:
Handle hot oil carefully to prevent burns.
Add suvali to hot oil cautiously to avoid splattering.
Handle dough gently to prevent toughness.
Maintain consistent sizes while shaping suvali.

for salted suwali

Combine all-purpose flour, 2 tbsp granulated wheat, roasted sesame seeds, half tbsp turmeric powder, salt, and 1 tbsp clarified butter in a mixing bowl.
Gradually add milk to the mixture while stirring with a teaspoon until a dough forms.
Mix the ingredients thoroughly to form a dough, and let it rest for 15 to 20 minutes.
Knead the Modii Suvali dough for 8 to 10 minutes.
Divide the dough into small portions and knead into a thin round shape softly.
Heat oil in a pan over medium heat.
Remember that you thoroughly fry the formed Modii Suvali pieces in the oil.
Once fried, remove the Modii Suvali from the oil and set aside.
